Over two hands-on days, you'll work through six distinct cheesecake styles, each teaching a different core technique: setting a no-bake base without guesswork, baking eggless cheesecakes to a perfect creamy set, mastering the deliberately burnt, crustless Basque method, and getting a classic New York bake right dense, cracked-free, and evenly set. You'll leave with the techniques to make each of these from scratch, plus the fundamentals of flavour pairing, and glaze/gel finishing.
